RECIPE :
Ingredients
- 1/2 cup toor dal / split pigeon peas, rinsed well till water runs clear and soaked in water for an hour
- 1/4th tsp turmeric powder
- 1/8 tsp asafoetida
- 2 tsp oil
- 2 tsp clarified ghee
- 1 3/4th tsp cumin seeds
- 2 to 3 green chillies chopped fine (adjust to spice required)
- 3 to 4 curry leaves
- 2 dry red chillies broken
- 1/2″ piece of ginger finely chopped
- Finely chopped coriander leaves to garnish ( not shown in pic)
METHOD :
Pressure cook the soaked dal along with 1/8 tsp turmeric and a pinch of asafoetida and 1/2 tsp of oil until pressure is released four times so that the dal is cooked well. Once the pressure settles down, cool the dal and mash it well.
Add water as required to the dal to get an even consistency. Add rest of the turmeric powder, salt, stir well and let it simmer on low flame.
In a seasoning pan heat oil, add cumin seeds, when they crackle add a pinch of asafoetida, green chillies, dry red chillies, curry leaves, switch off the flame add ginger, mix well and pour the seasoning over the dal. Mix well and cover for a minute so that the flavours sink into the dal. As the dal boils add in 1 tbsp ghee and stir well. Garnish with coriander leaves.
Serve piping hot with steamed rice and tawa fried veg of your choice or even with rotis.
NOTE :
Adding turmeric powder while cooking the dal gives a nice colour to the dal.
Adding 1/2 tsp of oil while cooking the dal prevents/ reduces excessive foaming of the dal.
1/2 cup of toor dal gives approximately 1 1/2 cups cooked dal.
